Baked Eggs With Fresh Herbs, Parmesan Cheese, Healthy, Delicious and Easy. By Rockin Robin
These baked eggs with herbs are so easy to make and take just a few minutes to prepare. These are actually broiled in the oven and come out with a nice browned crispy top of parmesan cheese. We use rosemary, thyme, basil and flat leaf Italian parsley. If you don't have a garden, you should. These are so easy to grow and they make recipes taste so much better. Ingredients: 2 tsp. melted butter thinly sliced potato, you can use sweet potato, red or yukon gold (enough to line the baking dish). 1/4 tsp. rosemary, minced 1/4 tsp. thyme, minced 1/4 tsp. ground turmeric 3 leaves of fresh basil, chiffinade (rolled and sliced then chopped) small handful of parsley leaves 1 clove of garlic, minced salt and pepper 1 heaping Tbsp. parmesan cheese, grated 2 or 3 eggs Directions: Preheat the oven to broil. Start by preparing the herbs. Peel the leaves from the rosemary and thyme and chop very fine and place in a bowl. Next, chop the parsley and basil and place in another bowl. Peel and slice the potato of your choice or you could leave it out entirely. If you use it, slice the potato very thin. Melt the butter and spread half of it with a brush into the bottom and sides of a small baking dish or ramekin. Layer the potato in a single layer on the bottom and up slightly on the side of the dish. Brush the rest of the butter on top of the potato. Broil in the oven 6 to 8 inches below the heating element for 4 to 5 minutes or until the potato is fork tender. Remove from the oven and sprinkle the turmeric over the potatoes and add a little salt. I cracked two eggs into a separate bowl and then poured them into the baking dish. You want to be gentle so as to not break the yolks. Sprinkle generously the rosemary, thyme, basil and parsley over the eggs. Using a garlic press, squeeze a little garlic out and flick it off with a knife to help spread the garlic over the eggs. Season with a little salt and pepper and top with the parmesan cheese. Return the dish to the oven and broil for 4 to 5 minutes depending if you like your eggs over easy or medium. I hope you enjoy these eggs, if so please leave a thumbs up and comment.
